We purchased a pressure cooker a couple of months ago and I have become obsessed with it. The fact that I can take a piece of meat that normally takes 3-4 hours to cook and cook it in about an hour has charged me up to find more things to cook in the pressure cooker. First it was corned beef, then it was a pork sirloin roast, and today it was beef. Not just any type of beef but shredded beef sandwiches! I ordered a cookbook that arrived yesterday, Miss Vickie’s Big Book of Pressure Cooker Recipes and it’s filled with page after page of delectable recipes that I can’t wait to try. First on my list to try was the Shredded Barbecued Beef Sandwiches listed on page 125. Start with mixing together a can of Dr. Pepper, Molasses, Apple Cider Vinegar, Liquid Smoke, and spices, throw in a 2 lbs. eye of round roast and 40 minutes later it’s done cooking. All that is left to do is shred the beef and reduce the home-made BBQ sauce made from the ingredients.
We were both very happy with this recipe and would definitely cook it again. The meat was cooked perfectly tender to shred after just 40 minutes. The only slight problem was that the sauce was a little watery even after simmering it for 15 minutes to get it to reduce, but it did well once mixed back up with the beef and being placed in between two halves of French’s Pastry Bakery (in Orange, 2064 N. Tustin Ave.) hamburger buns
