{"id":1622,"date":"2010-04-04T09:10:04","date_gmt":"2010-04-04T16:10:04","guid":{"rendered":"http:\/\/eatinoc.com\/?p=1622"},"modified":"2014-05-22T11:02:44","modified_gmt":"2014-05-22T18:02:44","slug":"easter-breakfast-2010","status":"publish","type":"post","link":"https:\/\/inocnetwork.com\/eatinorange\/eat-in-oc-feature\/cooking-with-dan\/easter-breakfast-2010\/","title":{"rendered":"Easter Breakfast 2010"},"content":{"rendered":"<p>First off I wanted to wish you all a happy Easter! \u00a0For those of you that pay attention here on Eat in OC, my favorite breakfast is Eggs Florentine, specifically the Eggs Florentine at the Filling Station in Orange. \u00a0Starting with our first Easter in our home (last year) I made it a tradition to cook Eggs Florentine for myself on Easter morning (you can see my <a href=\"http:\/\/dangarion.com\/general-news\/eggs-florentine-for-easter\/\">2009 attempt here<\/a>). \u00a0Last year I forgot the tomatoes and I used a jar of Hollandaise sauce from the store. \u00a0This year I went full tilt and made Hollandaise\u00a0sauce from scratch. \u00a0I used a quick <a href=\"http:\/\/www.signonsandiego.com\/news\/2009\/may\/06\/lz1f06readers183540-blender-version-quick-take-hol\/?uniontrib\">blender Hollandaise sauce recipe<\/a> that I found from the <a class=\"zem_slink\" title=\"New York Times Cookbook\" rel=\"amazon\" href=\"http:\/\/www.amazon.com\/York-Times-Cookbook-Craig-Claiborne\/dp\/0060160101%3FSubscriptionId%3D0G81C5DAZ03ZR9WH9X82%26tag%3Dpobyda02-20%26linkCode%3Dxm2%26camp%3D2025%26creative%3D165953%26creativeASIN%3D0060160101\">New York Times Cookbook<\/a>. \u00a0The only change I made was I used just 2 egg yolks because that is all I had left! \u00a0This made a buttery lemon sauce which just zip of heat from the cayenne. \u00a0The sauce was far and away better than that from the jar!<\/p>\n<p><strong>Blender <a class=\"zem_slink freebase\/en\/hollandaise_sauce\" title=\"Hollandaise sauce\" rel=\"wikipedia\" href=\"http:\/\/en.wikipedia.org\/wiki\/Hollandaise_sauce\">Hollandaise Sauce<\/a><\/strong><\/p>\n<p>Makes 3\/4 cup<br \/>\n1\/2 cup butter<br \/>\n3 egg yolks<br \/>\nJuice of 1\/2 lemon (2 tbsp.)<br \/>\nSalt, to taste<br \/>\nPinch of cayenne<\/p>\n<p>Melt butter and keep it hot, but do not brown. Put the yolks, lemon juice, salt and cayenne in the container of an electric blender.
