Pieology – Fullerton

When Pieology in Fullerton opened the reviews described it as the pizza version of Chipotle, and honestly the reviews aren’t that far off. Pieology’s concept is that they only serve personal sized pizzas (or you can share them!) for the price of $6 (classic cheese pizza) or $7.50 (any other pizza with whatever toppings you want). They make the pizza before your eyes assembly line fashion, oiling and then saucing the dough, tossing on cheese, and placing on the ingredients. Nothing is new here, but it’s done in such a way that the design of your pizza is part fun and part art. After your pizza is finished being assembled it is placed into the open fire oven to cook and after about 7 minutes your order is ready. Who would have thought that pizza can be this fast?

What makes the pizza so fast is the thin crust, that gets just enough crunch to satisfy those that love thin crust (Mrs. DanGarion) but has enough chew to please someone who likes normal crust (ME!). The choice of ingredients are basic and they will put more on the pizzas if you ask, although I doubt they would pile it on 6 inches thick if you told them too, since there is no money to be made in being that excessive. We went with Pieology with my parents and each of us ordered our own pizza. Here is what we got.

Mrs. DanGarion, got the #5 which is close to a Margherita.

Overall everyone enjoyed their pizzas, and they passed the Mrs.DanGarion test on the crust. Pieology would definitively be a place we would go back to if we were in the area and wanted some quality pizza.

The staff was nice enough, although the seating area was a bit of a mess when we came in, many of the tables appeared as though they needed to be wiped off, it wasn’t that bad, but considering they weren’t really busy when we came in I would have expected it to be a bit “cleaner”. Nonetheless it didn’t impact our meal since our table was fine. I’d love to see this concept come to the city of Orange.

On a side note we were talking as we were eating out pizzas and wondering what the significance was of them selling Ding Dongs. I think they could expand their menu to include some awesome sweet/dessert style pizzas. Things like a smore pizza with marshmallows, broken up chocolate bars, and graham cracker crust, or apple pie pizza with a cinnamon crust, apples, and a slice of american cheese. I have other ones I thought of as well, so if the Pieology guys want to talk, email me… 😉
